Last night I was in the mood for a veggie burger and fries. I was in no mood to go to the store after a long day of running an infinite number of errands. What’s in the cabinets? TVP! Potatoes! Dinner!
I soaked the TVP in low sodium veggie broth, added an egg and some flour, then sauteed some patties in a little bit of olive oil. The potatoes I cut into fries and baked in the oven. Luckily, I found “sandwich rounds”, tomatoes and lettuce in the fridge.
Camille declared that the TVP burgers were better than store bought ones! Who knew that I could rustle up dinner like that?
