Last year we visited Wilderness at the Smokies for our school year kickoff. This year, we kicked it up a notch and came to the Great Wolf Lodge in Concord, NC. The theme of August’s Happiness Project is “cooking”. I’ve cleaned the kitchen, organized the spices and bought a few new supplies. Finally, it is time to try out new recipes! Not really low carb, but I made a corn soup from Vegetarian Times tonight!

We’re in Kentucky, staying with friends for a couple of days. The girls loved swimming in their pool after dinner last night! Chloe, of course, only brought half her swimsuit. Thankfully, she is small and could borrow one!
